“Caboco do Tapajós”, as he defines himself, Saulo Jennings started cooking at the age of 15, when he was still giving kitesurfing lessons on the beaches of Tapajós and preparing meals for his students. This experience gave birth to Casa do Saulo, which opened its doors to 20 people and today welcomes up to 320 at a time. With almost 15 years of history, the chef has won awards and recognition, such as Chef of the Year 2024 by Prazeres da Mesa and the title of World Tourism Ambassador by the UN, for valuing and strengthening riverside communities in the Amazon.
